I'm building my first gaming computer and I don't know which well give me the best gaming experience I'm going to get a intel i5 3570k.

Read the reviews for a single GTX 760 and a GTX 660 SLI setup and see what the differences are from the same review site(s).

HardOCP and PCPER are some of the better review sites and there are several other excellent review sites.

If the gaming performance is about the same, I would go for the single video card setup which should run cooler than a dual card setup.

With a dual card setup you need to have an excellent case cooling setup.

You didn't provide any information about your hardware setup and you'll probably need a high quality 750 - 850 watt power supply.
