Turns out that if any of my USB media is formatted in HFS+, the UD5 freezes early in the POST process (see my previous posting). When I reformatted my USB stick with FAT, there were no problems.
This isn't an actual solution in my situation, but it sure helps to know the cause.
Is anyone able to pass POST with an HFS+ formatted USB drive inserted? If so, which BIOS are you using? I am currently running F9K.

UPDATE: An HFS+ format on it's own is not the problem. The lock seems to only occur when a bootloader is installed on the volume (PC-EFI or Chameleon) I'll test more to narrow down the issue. If someone has already figured this out, please post! Thanks!
