Seagate or Maxtor Hard Drive Upgrade

I can pick up either a Seagate 250gb SATA (7200.8 model) Hard Drive, or 2 Maxtor DiamondMax Plus 9 160gb SATA hard drives for the same price. Will it be better to have the one Seagate by itself or the two Maxtors in Raid. I currently have a 120gb and 40gb WD Caviar ATA 100 (8mb cache) drives.

Well two 160GB drives is 320GB so that seems to be a much better choice than a single 250GB drive. Regardless of whether or not they're in RAID, it'll be more space and more speed if you set it up correctly.
