    Can anyone help me with enhancing my bios settings , i would like to get my pc overclocked to 3Ghz. Below i provide some cpuz images to assist understand my cpu, memory and such...

    ---Also, while my cpuz was on CPU i noticed the speed fluctuated from 1400Ghz - to its max 2500Ghz, depending on the activity...is this the norm? If so that's a efficient way to behave

    Yes, that is normal.

    EIST - Which is Enhanced Intel Speedstep technology plays a major part in power saving and the multiplier switching between 6x and 12.5x (in your case) is normal.At idle it'll be at 6x and under load it'll be at 12.5x. It can be disabled in the bios so your processor will always operate at 12.5x under any condition.
    GA-P35C-DS3R Rev2.0 F11 bios, E8200 (@3.0Ghz), OCZ DDR3 PC3-10666 Reaper 4GB (@1200Mhz), Xonar D1, 8800GTS 512, Corsair HX520 (Single 12volt line, Max 40A), WDC 3200aaks/5000aaks in AHCI mode, Vista 64 Premium.

            Sorry for the late reply, I have had some connection issue the past two nights!!

            Ya, you need to disable C1E and EIST in the advance BIOS section

            Can you give me a link to your ram so I can best advise you?
