This is not specific to the Gigabyte or the b550 chipset, it happens across the entire gambit of chipset and boards.
Note about 'Fast Boot' this is a hybrid hibernation mode, and if this is enabled, and you do a normal shutdown from the Start Menu, it is not a real hard shutdown, it is still a 'soft' shutdown and multiple devices, especially plugin devices both BT and USB, like keyboards and mice do not have their adapters/ports power cycled.
The solution I have found is to actually disable the BT's low power/turn off mode in the GATT device listing, and turn off Fast Boot (which really has no impact on boot time with a SSD, maybe by a few seconds). I found this by investigating the issue happening to other non b550/570 boards with the AX200.

For the completely disappearing BT issue given that power removal is required to recover the device it's h/w and not driver related of fixable. The irony being the BT and LAN issue doesn't plague linux installations using latest kernel but sadly even with Windows 10 21H1 and with latest intel drivers the BT disconnects frequently on Gigabyte AORUS Pro AC with bios F12, tried 13j but my keyboard stutters badly when connected with usb 2.0 port. This is a driver/OS issue most likely.

If it's the BT connection then many people forget to attach the antenna which is not just for WiFi
If Windows chimes with a USB device disconnect and reconnect then Ive not seen that with the built-in BT device but for external USBs its what AMD have been trying to resolve in AGESA
If it's showing a yellow exclamation mark in device manager after resume then that's what Intel addressed in driver 22.20
If it's the BT device completely disappearing and requiring power removing to recover then
- it's likely a h/w issue in the AX200 module
- I don't think we'll see a driver level fix from Intel
- It seems more common on GB and especially the B550i so maybe other brands have different power circuits or have a work- around in BIOS that GB have finally caught up with in latest BIOS
